If you are like us, and garden in the summer, there will come a point where zucchini will be coming out of your ears as they say. Zucchini is a staple in our household, and there is so much of it all at once when it becomes available. Lucky for all of us, there are a ton of ways to use zucchini with nearly any meal.

So what do we do with all that zucchini?

Grilling zucchini opens a whole new world of flavors when it comes to boring old vegetables. With a subtle sweetness, and smokey char, grilling zucchini is my absolute favorite way of preparing it. Grilled Zucchini is a perfect summer compliment to almost any meal, and will give you something fresh and delicious that is easier than almost anything else you can grill up.

As always, I prefer to use natural charcoal when grilling, and there is no exception here. However, grilled zucchini is amazing on a gas grill as well.

In order to prevent a mess, it may also help when cooking your zucchini to use a grilling basket. These versatile baskets are great for any vegetables.

Grilled Zucchini Recipe

Ingredients:

  • 2 medium zucchinis, sliced lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine the sliced zucchinis, olive oil, garlic powder, basil, oregano, salt, and pepper. Mix until the zucchini slices are coated with the oil and spices.
  3. Place the zucchini slices on the grill, and cook for 2-3 minutes on each side, or until they are tender and slightly charred.
  4. Remove the zucchini from the grill and place on a serving plate. Sprinkle with a little extra salt and pepper, if desired.
  5. Serve the grilled zucchini as a side dish or as a vegetarian main course. It’s also a great addition to a salad or sandwich.

Zucchini and Parmesan Grilled Recipe

Ingredients:

  • 2 medium zucchinis, sliced lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley leaves, for garnish

Instructions:

Preheat your grill to medium-high heat.

In a bowl, combine the sliced zucchinis, olive oil, garlic powder, salt, and pepper. Mix until the zucchini slices are coated with the oil and spices.

Place the zucchini slices on the grill, and cook for 2-3 minutes on each side, or until they are tender and slightly charred.

Remove the zucchini from the grill and place on a serving plate. Sprinkle the grated Parmesan cheese over the top of each slice.

Return the zucchini to the grill and cook for an additional minute, or until the cheese is melted and slightly browned.

Remove the zucchini from the grill and garnish with fresh parsley leaves.

Lemon Zucchini Grilled Recipe

Ingredients:

2 medium zucchinis, sliced lengthwise
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper, to taste
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh basil leaves
1 tablespoon grated lemon zest
Instructions:

Preheat your grill to medium-high heat.

In a bowl, combine the sliced zucchinis, olive oil, garlic powder, salt, and pepper. Mix until the zucchini slices are coated with the oil and spices.

Place the zucchini slices on the grill, and cook for 2-3 minutes on each side, or until they are tender and slightly charred.

In a small bowl, mix together the lemon juice, basil, and lemon zest.

Remove the zucchini from the grill and place on a serving plate. Brush each slice with the lemon and basil mixture.
