What is a Pork Loin?

The pork loin is a specific cut of meat that comes from the back of the pig. It is a large, lean, and tender cut that runs along the top of the pig’s ribcage, from the shoulder to the leg. The pork loin is known for its mild flavor and tenderness, making it a popular choice for grilling, roasting, and other cooking methods. It can be purchased boneless or bone-in, depending on your preference and the specific recipe you’re using.

Why Should I Cook a Pork Loin?

There are several reasons why people enjoy grilled pork loin:

  1. Flavor: Grilling pork loin imparts a smoky and charred flavor that enhances the natural taste of the meat. The combination of the caramelization from the grill and the marinade or seasonings used adds depth and complexity to the flavor profile.
  2. Juiciness: When cooked properly, pork loin can be incredibly juicy and tender. Grilling helps seal in the moisture, resulting in a succulent and moist texture that is highly satisfying to bite into.
  3. Versatility: Grilled pork loin is incredibly versatile and can be paired with a wide range of flavors and accompaniments. Whether you prefer tangy barbecue sauces, zesty marinades, or herb-infused rubs, the pork loin can absorb and complement various seasonings.
  4. Healthiness: Pork loin is a relatively lean cut of meat, making it a healthier option compared to fattier cuts. Grilling allows excess fat to drip away, reducing the overall calorie content of the dish.

  • ½ teaspoon cayenne pepper (optional, for added heat)

Instructions For Seared and Grilled Pork Loin:

Preparing the Pork Loin:

  • Trim any excess fat from the pork loin, leaving a thin layer for flavor and moisture.
  • In a bowl, combine the olive oil, minced garlic, smoked paprika, brown sugar, chili powder, salt, black pepper, and cayenne pepper (if using).
  • Rub the mixture all over the pork loin, ensuring it is evenly coated. For intensified flavors, marinate the pork loin in the refrigerator for 2-4 hours or overnight.

Searing the pork loin in a cast iron pan:

  • Preheat a cast iron pan over medium-high heat.
  • Add a small amount of oil to the pan and swirl it around to coat the bottom.
  • Place the pork loin in the hot cast iron pan and sear each side for approximately 2-3 minutes or until a golden-brown crust forms.
  • Remove the pork loin from the pan and transfer it to a plate.

Preparing the grill:

  • Preheat your grill to medium-low heat for slow cooking. I aim for 275 degrees on this cook at the grate level.

Slow cooking the pork loin on the grill:

  • Allow the pork loin to slow cook for approximately 45-60 minutes, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer to check for doneness.
  • During the last 15 minutes of cooking, brush the barbecue sauce generously over the pork loin, allowing it to caramelize and create a flavorful glaze.

Resting and serving:

  • Remove the pork loin from the grill and let it rest for 5-10 minutes. This resting period allows the juices to redistribute, resulting in a moist and tender final product.
  • Slice the grilled pork loin into desired portions and serve hot, accompanied by extra barbecue sauce for dipping or drizzling.
  • Complete the meal with your favorite BBQ sides, such as coleslaw, mac and cheese, or grilled vegetables, for a satisfying and memorable dining experience.
