What is a Tri Tip ?

Before cooking, I am always curious what cut of meat I’m actually going to serve. I guess processing some of our own families meat has led me to this curiosity , anyway …

Tri-tip is a cut of beef that comes from the bottom sirloin area of the cow. It is a triangular-shaped muscle located just below the tenderloin and above the flank steak. The tri-tip is known for its rich flavor, tenderness, and versatility in cooking methods. It is often used for grilling, roasting, or smoking, and is a popular choice for barbecues and steak dinners.

How to Grill Tri Tip

Ingredients:
For the Tri-Tip:

  • 1 tri-tip roast (about 2-3 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

For the Horseradish Sauce:

  • 1/2 cup sour cream
  • 2 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions for Grilled Tri Tip:

Preparing the Tri-Tip:

  • Start by preheating your grill to medium heat. If using a charcoal grill, set up a two-zone fire by banking the charcoal on one side. I also like to use some smoking wood that accents the beef, like pecan.
  • If using a gas grill, you can simply turn half the burners on, all on one side.
  • Rub the tri-tip with olive oil, ensuring that all sides are coated.
  • In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, paprika, and dried thyme. Mix well to create a seasoning blend.
  • Sprinkle the seasoning blend evenly over the tri-tip, pressing it gently into the meat.
  • Let the tri-tip rest at room temperature for about 30 minutes to allow the flavors to penetrate the meat.

Reverse Searing the Tri-Tip:

  • Place the seasoned tri-tip on the cool side of the grill or indirect heat. Close the lid and cook for approximately 30-40 minutes or until the internal temperature reaches 120°F (49°C) for medium-rare.
  • For a medium doneness, cook until the internal temperature reaches 130°F (54°C). Adjust cooking time according to your desired level of doneness.
  • Once the tri-tip reaches the desired temperature, remove it from the grill and let it rest for 10 minutes. This allows the juices to redistribute within the meat.

Preparing the Horseradish Sauce:

  • In a small bowl, combine sour cream, prepared horseradish, Dijon mustard, lemon juice, and minced garlic. Mix well until all the ingredients are fully incorporated.
  • Season the sauce with salt and pepper according to your taste preferences. Adjust the amount of horseradish for a milder or spicier flavor.

Serving The Grilled Tri Tip

  • After the tri-tip has rested, preheat your grill to high heat.
  • Sear the tri-tip for 2-3 minutes on each side, or until you achieve a nicely caramelized crust.
  • Remove the tri-tip from the grill and let it rest for an additional 5 minutes.
  • Slice the tri-tip against the grain into thin slices.
  • Serve the grilled tri-tip with a dollop of horseradish sauce on the side.

What Sides to Serve with Grilled Tri Tip:

Here are three delicious side dishes that pair well with grilled tri-tip:

1. Grilled Vegetables:
Grilling vegetables such as asparagus, bell peppers, zucchini, or eggplant alongside your tri-tip adds a smoky and charred flavor to the meal. Toss the vegetables in olive oil, sprinkle with salt and pepper, and grill them until tender and slightly charred. This side dish complements the meaty flavors of the tri-tip and adds a vibrant and healthy element to the plate. Our how to guide :

2. Creamy Garlic Mashed Potatoes:
Creamy garlic mashed potatoes provide a comforting and indulgent side that pairs beautifully with grilled tri-tip. Prepare traditional mashed potatoes by boiling peeled and diced potatoes until tender. Drain the potatoes and mash them with butter, milk or cream, roasted garlic, salt, and pepper. The creamy and garlicky potatoes create a wonderful contrast to the savory meat.

3. Tangy Coleslaw:
Coleslaw is a classic side dish that adds crunch and freshness to a grilled tri-tip meal. Make a tangy coleslaw by shredding cabbage and carrots, and tossing them with a dressing made of mayonnaise, vinegar, sugar, mustard, salt, and pepper. The crispness of the coleslaw balances the richness of the meat and provides a refreshing and zesty contrast.

Remember, these are just a few suggestions, and you can always mix and match sides based on your personal preferences. Other popular options include roasted potatoes, grilled corn on the cob, green salad, or roasted vegetables. Ultimately, choose sides that complement the flavors, textures, and theme of your meal to create a well-rounded and enjoyable dining experience.

Grilled tri-tip prepared using the reverse sear method ensures a tender and juicy steak with a beautiful crust. The horseradish sauce adds a tangy and creamy element that perfectly complements the rich flavors of the tri-tip. With this recipe, you’ll have a show-stopping dish that will impress your family and friends at your next BBQ.
