Ingredients

  • 2 racks of baby back ribs
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup honey
  • 3 tablespoons rice vinegar
  • 3 tablespoons Asian sesame oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 green onions chopped (for garnish)
  • Sesame seeds for garnish
  • Chopped fresh cilantro for garnish

Instructions

  • Preparing the Ribs:
  • Clean the ribs and remove the membrane from the back of the racks. Pat them dry with paper towels.
  • Ribs Trimmed and membrane off
  • Cut the ribs into individual pieces.

  • Making the Sauce:
  • In a medium saucepan, combine soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Cook over medium heat, stirring frequently, until the sauce thickens slightly. Remove from heat.
  • Preparing the Smoker:
  • Preheat your smoker to 225°F (107°C). Add your choice of wood chips to the smoker box.
  • Smoking the Ribs:
  • Place the individual rib pieces on the smoker grate. Smoke the ribs at 225°F (107°C) for about 2.5 to 3 hours, or until the meat is tender and has a nice smoky flavor.
  • Applying the Sauce:
  • During the last 30 minutes of cooking, brush the ribs with the prepared sauce. Apply a generous coating on both sides of the ribs.
  • Close the smoker lid and let the ribs continue to smoke for another 20-30 minutes, allowing the sauce to caramelize and create a flavorful glaze.
  • Serving:
  • Remove the ribs from the smoker and let them rest for a few minutes.
  • Garnish the ribs with chopped green onions, sesame seeds, and fresh cilantro before serving.
